Overnight Apple Pie Chia Pudding

Now that the days are getting warmer, I’ve definitely been craving some cooler breakfasts.  Instead of oatmeal or home fries, I’ve been enjoying a lot of smoothies, banana ice cream and, of course, my favorite – chia pudding.

Chia pudding is amazing for a lot of reasons.  Chia seeds are high in protein and healthy fats, and have such a neutral taste you can use them in almost everything!  I always add a teaspoon to smoothies, but sometimes, you just have to let chia shine on its own.

In this recipe, I take all my favorite apple pie flavors and combine them with chia and some raw nuts for a high protein breakfast.

Apple Pie Chia Pudding

for the pudding

  • 2 tablespoons chia seeds
  • 2/3 cup almond milk
  • 1/2 teaspoon stevia
  • 1/2 teaspoon cinnamon

for the toppings

  • 1 apple
  • 1/4 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/4 tsp nutmeg
  • a handful of raw mixed nuts

Combine the pudding ingredients and set in the fridge overnight or at least 2 hours.

Dice the apple and mix it with the other toppings ingredients.  Layer with the chia pudding and enjoy!
